2 problems:

If like this, the fitting unscrews from the tank....

The gauge on my holding tank has all the lights on, even if pumped out. It was not obvious how to pull and clean the sensors (the wires run through a separate bulkhead fitting on top, but the fitting does not have threads that I could see). How does one pull and clean the sensors?

May I offer a suggestion before you go to all that smelly trouble? You may want to try Noflex Digestor, if you haven't done so already.

To clear stuck gauges of gradoo:

Empty the holding tank
Add about 4 tablespoons of Noflex Digestor flushed down the toilet
Fill tank 90-95% with water to get the solution to cover all the way up to the gauges
Let sit 48 hours, so maybe over the weekend, let it work
pump out again, refill about 1/2, see if the gauges work, if not you can repeat the process

You can remove and clean sending unit (best solution) or fill tank with few gallons of water and good cleaner and take boat for a ride. Water sloshing inside tank should clean and free up stuck floats.
As far problem with water pump. Check for broken or missing o-ring on the filter. Another possibilites are: cracked pickup tube inside water tank, faulty connection tank-water pump, faulty pump, cracked filter housing.
