What's your favorite Treager tip?

You brined and injected, nice! How hot did you smoke it, and how long did it take? Their video said 275 for a few hours, I've got a 22lb bird this year, so I'm thinking I should plan on 4-5 hours.
 
@MrHappy that is a high quality ($$$) rig that you have there.

When I used to be part of a competition team, we had a cobbled together 8 foot smoker that we used. There were shiny rigs that were there but I never cooked on one.

What's behind the door? Storage, sleeping area?

Do you cook commercial or competition - or both? Looking again, probably not competition, looks like either electric or gas.

Tell us more about the rig.
The Southern Pride in the back is propane, with a wood locker on the Starboard side if it's anything like what I saw today. Many zeros behind that number......
 
Buy a Big Green Egg instead and don’t look back...the best thing I’ve ever purchased!
I was there until I got flare ups during a smoking event that made my ribs look like chicken thighs seen elsewhere on this thread. Killed em so dead, the bones were falling off the bones.

....and this is my cooking profile. I have the thermometer in the breast.
As I mentioned I injected it with creole butter then dusted it with Tony Cachere’s . IIRC I used olive oil on the bird as well.

I’m unsure of the time for a 22lb Turkey. I believe I had a 17lb bird. You notice I bumped it up to 350 - that’s so you get a nice crispy skin. Don’t forget you need to let it rest for at least 1/2 hour.

No tips, but I'm looking to spatchcock and smoke my turkey on my Traeger this year. I usually go the deep fry route, but am going to follow a YouTube video I found from MeatChurch that sounds really good. Brine overnight, spatchcock it, rub it and put it on the smoker.

I ordered the Bird Bath poultry brine from Meat Church. The rub that they recommended is called Deez Nuts Honey Pecan BBQ rub. Yeah, I know, but they named it. :)

It's not looking likely to get here in time, but I did happen to find a local source for it too, so I'll have that and Ollie's recipe as backups. Worst case, if it doesn't arrive in time, I can try it for Christmas.

Pink butcher paper with no wax or coating. Use it to wrap any beef or pork smoke when it goes into stall around 165 degrees. IMO, works much better than foil. Bark comes out better and the meat is less likely to dry out. Used to be hard to find but now available on Amazon.
 
Indeed Al. Pink butcher paper is a must have....get the 24"

Kevin - Deez Nuts is fantastic as well. Let us know how it comes out on the Turkey.

I have a really good recipe for a turkey. The website it's from has gone through some changes and it's not there anymore. I would share it with you guys, I just have to figure out how. It's several pages long.
It has quite a few steps, and marinades and injections, but it sure is good.
It's called Roxy's Hurricane Turkey.
I have it in a word document if anyone wants it. I'm pretty sure I can email it, it's 976kb.

Big time agree on any type of smoker. Aaron Franklin has been a huge proponent of butcher paper. Can’t argue with his success.

If you are ever in Austin, TX, visit his place. Make sure you get in line by 7 or so to get in for lunch. It’s that good!
 
Getting hungry reading this thread. So slightly on and off topic and sorry if it is viewed as a hijack, but I plan to buy a smoker style BBQ for the cottage this spring. What are the pros/cons of Traeger vs other brands. My B.I.L. Has one of the the Bradley electronic smokers and it does a decent job, but not sure of advantages. I would LOVE to have a custom big steel trailer job on wheels like I have seen that some of my US relatives have, but that is not in the cards.

Traeger seems to be pretty much the General Motors of the pellet smoker world. Reasonably good quality and price. I went with Recteq, which is considered to be a little bit higher quality (all stainless) but pricey, because they had wifi integration. Traeger and I think all others have that now.

Very helpful. Thanks. I will have a couple of units. My main BBQ is near end of life and I will probably replace with a Weber like I have at home or maybe Napoleon (made in Ontario and their high end ones are not bad). I have a spiedini grill too which are great for small skewers. My smoker is currently a Big Chief, so old school.

I called them, and they went through some troubleshooting with me. They sent the part that they thought it was, for free. That ended up not being the problem, they then sent me a whole new hopper assembly with controller, for free, outside of the warranty by at least a year. That is some of the best customer service around.

We like our GMG. Great quality, great price for wifi. I added a shelf system as well.

Ollie, I like your shelf system. Can you post a few more pics of how those brackets attach to the grill? Also, where did you get the shelves from?
 
I made this rack a few years ago. It works well, and I didn't have to modify my grill.
