i had a similar issue with my 5.0mpi/b3 . Not as bad as you with the alarm going off but a noticeable sudden jump in temps after coming off plane and returning to normal after some minutes . I checked the impeller which was fine but noticed a scored backplate of the housing .

The raw waterpump tends to get scored by the inpeller over time.
You should remove the waterpump and inspect - i bet you have scoring in there and consequently a loss in pumping power at low rpm,s .

I think searay gives the DRY weight without ANY fluids in engine / drive as well only the version with the smallest engine / drive as well no additional extras.

3000 watts at 12 volts are 250 amps . Obviously your alternator cannot do it .
I agree the ac does not draw that much but it draws enough to overload your alternator .
In worst case you wreck your electrics , in best case you drain your batteries since for a while they will buffer the load ...
