Winterizing my 5.7l. I'm going to drain the engine at 4 points. 2 blue plugs on the manifolds and 2 plugs on the block. I will clean out the holes with a wire. Once drained I will suck up about 5 gallons of AF via muffs, killing the engine with fogger.

I need to read the manual on the HW heater.

I have screwed this up in the past because I skipped the engine drain step but I should be good with this process right?

I run the motor on the muffs (regular water) then fog till she stalls. Then I drain the manifolds (2 wing nuts 1 per manifold) and block (2 drain bolts one per side of block) using a plastic zip tie to clear out the drains, then replace manifold wing nuts and block drain plugs then fill manifolds, block, steering cooler etc with antifreeze through their respective hoses.

The only concern I would have is that you are diluting the anti-freeze by not draining the block first. I would drain, reinstall plugs, and then run it on muffs with anti freeze, and remove plugs after that.
 
Why would you run it on muffs with AF then drain? What am I missing here??
 
I drain the raw water cooled motors and manifolds after fogging and then remove the T stat hose and fill with anti freeze through there.
I bypass, drain, and blow out the HW heater.
 
I run the engines on muffs and fresh water for about 10 minutes to bring up to operating temp. This helps with my oil change in the next steps. But first I drain the now hot water from the blue plugs. (Put some dawn down in the bilge first and that hot water helps clean it out and cleans the bilge pumps). Reinstall plugs, run with muffs to circulate antifreeze then I top it off through the large hose until its full. Then I change oil.

2 plugs on the manifolds, 2 plugs on the block, remove the large water pump hose from the recirc pump (on the front of the motor) and a big splash of fresh water will come out as it gets trapped in the bend. Do you have a fuel cooler? If so, that will also have a blue plug.

I then remove all the hoses from the T-stat housing. First I fill the intake hose with AF(that runs under the motor to the transom) until I hear it dripping on the ground through the outdrive. This ensures the power steering cooler is also flushed of water.

Next, hold the hoses that feed your exhaust manifolds slightly higher than the elbows and fill them with AF until it also drips on the ground through the drive/transom assembly. Reconnect to t-stat housing

Lastly, pour some AF into the large hose that feeds the block. I like to do a 1/4 gallon or so and watch the holes in the block until I see pure pink, this helps push any residual water out. I then reinstall the block drains and fill that hose until it comes up out of the T-stat housing. Let a little extra push out as it will help ensure the intake manifolds is free of water that could get trapped in the valleys. Re-attach the hoses and you're freeze protected :)
