Has anyone ever found a good fitting insert to place over the sink to kind of form more working space ?
The edges of the sink are rounded, I tried to make one with my router, not much luck...

Nope.

Trust me from experience, don't plug up your sink if you have your fresh water system on and your are running in heavy seas. Ugly, wet things happen when your faucet turns on and overflows the sink.
