Updated the original post to include the solution. Ended up being a loose cable at the starter. Turns out the lack of power to the smartcraft lcd was a dead give-away.
Something I thought as well, though it was odd the engine cranked the first few times (with the kill-switch in OFF, unknown to me). I also opted to replace the solenoid as well as a precaution.
2005 260 Sundancer, 4th season with the boat with a total of 700hrs (520 at purchase). Outside of replacing the risers at purchase, leaking outdrive arm, and corroded outdrive o-ring, its been fairly smooth.

When i initially purchased my 260 I towed it from VA to KY through the Cumberland Mtns in my F150. Granted some of the hills I was going pretty slow, but on semi-flat ground there wasnt much issue. My F150 is a 5.4 w/ towing pkg, 9800lb capacity.
1. As you may have already noticed, all 260 Sundancers have the walk-through windshield. I am not aware of a weight limit (though I'll wager one exists), I am 220lb and find the stairs extremely sturdy.

I received a roll of the light brown foam before the Admiral told me she'd prefer the gray. A quick test revealed it seemed to scratch/gouge pretty easily. With two kids under 4, that may not last very long for me.
Ive got an 05 260 and I dont believe there are any significant differences to our vessels so i'll amplify some of the answers above.
1. Fresh Water Pump and Head both need to be ON from the power distribution panel. (Fresh Water tank also needs to have water!). I believe the switch in the head...
