What is normal water pressure and temp?

Hi all, my boat (new to me this season) has twin FWC 350 MPIs with V drives. I just had both raw water pumps and impellers replaced. At 3800 RPM, my port engine shows 23 PSI and 177 degrees, while starboard shows 31 PSI and 170 degrees. I am surprised to see this large of a variation in water pressure with new pumps. What should I be looking at?
It's worth noting that at full throttle, about 4500 RPM, the port engine climbed to 179 degrees before I backed down. At what temp do the engine alarms go off?

Perhaps the thermostats are in need of replacement, heat exchanger clogged if you're fresh water cooled.
 
Transmission cooler clogged (impeller parts)
Just because the heat exchanger is clean doesn't mean its still good.
Over the years the cooling tubes get covered and lose their cooling efficiency
to transfer heat.
It's only recommended that they be boiled out once then replaced.
 
inlet screens painted or scaling, riser/elbow clogging up a bit
Concentrate on watching the gauges and remove the water pressure gauge.FWC motors do tend to be closer to the 165-175 range with a 165 stat
 
Temps and water pressure both seem high. High pressure I dictates blockage for whatever reason. I would guess you want to be below 20psi and around 160degF.
