I just ordered new cockpit carpet for my 1998 290. Should be here within 2 weeks. Snap-In had two patterns for the '98 290, mine is the one piece style, the other pattern appeared to be pieced to fit each of the ER hatch covers. I ordered several carpet/backing samples from their online site and it took a while to decide. I really liked the new wave style backing although they also offered a black honeycomb style. I ordered the pebble (berber) carpet w/taupe edging & wave style backing. PLUS, they are sending me a FREE matching entry mat. Should look fantastic!

I have a one piece carpet. You have to roll it out of the way to open the engine hatch. It's not really that much hassle.
My carpet is getting tired, and will need replacing in a year or two. I will probably just get another one piece. It would be nice to be able to open the hatch without messing with the carpet, but the only time i do, is to get the table out. This is usually only once per trip if at all. The lack of carpet seams is nice. You would have to really cut the rear carpet into a lot of small pieces to make it work.
If I had a larger area where the pieces of carpet would be larger, then I would make the engine accessible through the carpet. I think this boat would require too many small pieces of carpet and too many snaps. That is personal opinion though.
I welcome anyone to prove me wrong though. I would love to see some pictures of a setup that allows access without removing the carpet. I need new carpet soon.
Those are cosmetic interior panels. I don't have a 340, so I cannot tell you where the fasteners are, but Sea Ray interiors are a lot like legos. They are put together in a certain order and you have...
