I've been slowly building up my collection of bourbon and whiskey. So far my favorites are Knoble, Basil Hayden Dark Rye and Old Forester Statesman. Honorable mention to Woodford reserve straight and Double Oaked. I don't much care for most rye's other than Basil's dark rye.

My experience has been that the engines have half closed systems. They still take in raw water to run through the heat exchanger and exhaust manifold. If you boat in salt water, you can either install a flushing system, or convert the boat over to closed loop, but I don't know specifically...
Yes, inboards definitely have less maintenance. Generally on mine, I would change the trans fluid every 2 years or 300 hours, and clean the filters. Every other change, I would put new filters in, but as they are metal, really inspecting and cleaning is probably all you really need to do.
