Are there any smokers on here? Smokin’ meat that is.

Last October I picked up a pellet smoker and have used it almost every weekend. The unit I have has WiFi and it’s almost not fair.

Today, because of limited trips to the grocery store, I’m going to attempt to smoke then slow cook a couple of chuck roasts I had in the freezer while working from home. Smoke them for about 6 hours and roast for another 3-4 hours in beef broth, onions, etc. it’s a new recipe so hopefully it will turn out.

Also, it’s ‘National Beer Day’

I know this isn’t the cooking channel forum, but if you have any good smoker recipes, share them. I have a couple I think are pretty good.
 
I've had a pellet grill for about 12 years, I love it. Made some baby backs last Sunday. I just smoke them for six hours around 180, sauce the last hour.
I also made a smoker out of an old refrigerator, I use it mainly for sausages. As a matter of fact, I have meat thawing out to make 20lbs of summer sausage, pepper sticks will be next. I also cold smoke cheese. Sausage and smoked cheese is our main snack for boating. I also make my own bacon from our hogs.
 
Pulled pork is delicious. This sauce is delicious on pulled pork. It's called Roxy's Mustard Vinegar Sauce.
I like to make tacos, and enchiladas with the leftover pulled pork.
Here's a pic of some pepper sticks I made.
Mustard Vinegar Sauce

1 cup apple cider vinegar
1/2 cup Yellow mustard
1/4 cup onion finely minced
2 cloves garlic pureed
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1/2 cup brown sugar
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce

Combine ingredients and simmer for 15 minutes, stirring occasionally.

For a smoother sauce, blend on high for a few minutes.

Weber Bullet here. I started smoking about 15 years ago because I couldn't get good BBQ around here. That has changed with the nationwide interest in BBQ, so I dont smoke as much as I used to. I also wasnt around the house much on weekends, but now that I'm home every day I might pick it back up. The only problem is that the family doesn't have the same appetite for meat that they used to, so I'm mostly smoking for myself.
 
Ooooh, you need to try smoked pork ribs then sauced, breaded, and deep fried!
 
We've had a Treager for several year. I've done baby backs, pork butts, chickens, just about every kind of edible meat you can imagine.

A couple of years ago one of our local chain groceries had baby backs on sale for $1.99/lb. I had them package up 40 lbs for me, still frozen, and they lasted about 6 months. I usually do them 3 racks of ribs at a time.

Nothing like sitting down to dinner with a heaping platter of ribs.

Pork Shoulder is my favorite to smoke. I usually get about 8 lbs at Costco and it's lasts for a few meals.

I brine it with "Traeger Cider Pork Shoulder Brine" for 12-14 hours then use this Meatheads Memphis Dust rub. There's no salt in this rub which is good because the brine is salty enough. This amount fills a mason jar.

Here's the brine from Traeger. You would be fine with about 3/4 cups course Kosher Salt. 1 Cup is a little much.

I have a Green Mountain Grill BTW.

Ok now its lunch time.And seeing we are all bored i will ask,you dont take your hoggs on the boat do you?
 
Here's stage 2 for the pulled beef/chuck roast. It's been smoking for 3 hours on the grate. Next step is to put it in some beef bullion and onion until it reaches 165º (3 hours), then it'll go in the oven, covered, for the rest of the afternoon until it reaches 205º.

Are you meaning my 500lb wife or the thread that happened a few years ago? My wife can get on the boat, we just can't have both of us on the swim platform at the same time.
