So I have the same problem with a 2011 185 sport. Only get the alarm over 3000 rpm's. It's very sporadic and the strange thing is, it only happens in the beginning of the season. Usually by July it stops completely. Where is the temperature sensor? Sounds like that's my gremlin. Next time...
Did you ever find out what the range of the temp gauge is? I have the same boat and mine runs at 3,000 rpms just under 1/2 way on the gage. I would love to know what the temp range of the gauge is

When using the flush port on the stern do you run the engine? if so how long? Does it somehow stop sucking water through the lower unit when you use this port if the engine has to be run?
I am an a slip this year so I need to use it. Next year I will be on a trailer and I can use muffs. I want to flush after every use. I don't want to wait until October.
