I have done a ton of research. I do not think Sea Ray made a camper cover for the 2010 370. Is there any 3rd party companies that make a bimini that can be installed using the pole holders in the gunnels or installed over the aft seating area.

Yup - a local company will be your best bet. There's nothing available "off the shelf" for something like this. You can find general fit bimini's that would work for a narrower boat like your second picture - but not a wider boat. Besides, you're probably going to want it done a certain way to best suit your needs - a customer top is the best way.

However, sure, you could get some poles and stick them into your rod holders, cut/hem a properly sized piece of canvas, then sew a zipper into the front of the material to connect to your arch valence. There's a number of ways you can secure the canvas to the poles. You'd need to make it secure/tight enough to be used underway - otherwise you'd be taking it down/putting it up each time you run the boat at a decent speed.
