And I am wondering what checks I should complete before taking it out this weekend? Any tips?

This should be an interesting thread. How much time do you plan or expect to spend heckling things out? You could spend a whole day if you were going to pull the plugs, check bellows & stuff like that.

I'm expecting the more experienced members will get into fuel and outdrive issues. But the obvious things to at least start with would be PS & outdrive fluids, engine oil, batteries, & belt condition. Once the boat is running monitor the temperature for a while & look at the water pump hoses & connections.

Sitting is really hard on the impeller. The folded blades WILL be compromised, even if it's still able to pump water.

Do you know if the fuel contains ethanol? If it does, that's a problem - a big enough problem that I wouldn't even start the engine before examining the fuel. If it's pure gas that was treated before it went away, there's a good chance that it's fine.

It was filled at the marina in Texas. It was stabilized over the winter. We did run it this summer (7.4MPI) and it cranked just fine and started. The impeller was recently changed, but I will watch the temperature gauge. I thought this one would pickup more. We just moved and thats why the use is low, but I have done way to much to make this 2000 look brand new to part with it. Sounds like the normal fluids, hoses, belts, etc. before getting under way. Leak check in bilge as well.

What do you mean by this?

Oh, I only meant that people go through things that keep them from running a boat for a period of time, but don't want to part with the boat. Therefore, it would be of interest to have a list of things to check prior to launch. That is all, nothing more. Expected more posts. Thanks for those that helped!!

Give it a good visual check, check fluid levels, make sure the drain plugs are put back in and away you go. A boat does not rot away just because it sat several months at a time. We do it every year up here, 9 months every year.
