DIY - Replacing helm gauge and switch panels

So - it's winter and thought of another project to work on while it's cold out. The helm gauge and switch panels have seen better days and I'd like to replace them. I know there are companies out there who will do the work but not sure I can really justify the expense for something which is just aesthetic at this point.

So... my question is has anyone done this themselves and what materials did you use? The gauge panel looks like wood grain plastic of some type - a little thicker than Formica. Would regular Formica hold up or is it not UV or exterior rated? Looking at their site it looks like they have exterior products but only in colors and not wood grain. The switch panels appear to be made out of metal - maybe aluminum? I can easily make this but would like to have the labels - does anyone know where these could be obtained? They are for the Halon fire system, blower warning and the SR logo.

Here is an old picture of the helm - I've since added a fish finder, new VHF and a Lowrance 7200c (post on that coming soon...) and just want to clean this up a bit. Love to get everyone's ideas or suggestions.
