New Guy needs advice on weekender

I am looking at a 1983 30' weekender with twin 454's. What is the difference in gas performance and or overall performance verses the twin 351's.

I had a 1988 30' Weekender with twin 260HP inboards. It would consume 14-15 gallons per hour at 2800-3000 rpm's. Speed over the bottom was 19-21 knots depending on current and wind. 454's would probably burn about 8 more gallons per hour, so I've heard.
