I would like to send the output (GPS for DSC) of my RL70C chart plotter to my Garmin 300 VHF (non AIS).
I have the cable on order and the schematics to show what wire goes to what and the NMEA out port on the chart plotter is free. It looks like it will work but I think I heard there are different versions or revisions of NMEA 0183.

Any advise, thoughts or actual information?

There's a version 2.0 and a version 3.01 that were widely used. Don't worry too much about the versions. If both devices support 0183 you should be fine. Newer devices tend to support both. Garmin usually has very good instructions and diagrams for connecting via 0183. I would look at those instructions as a guide.

One challenge is that although the NMEA 0183 standard is pretty much universal, each manufacturer seems to use different terminology for the same connections. For example: NMEA In/NMEA Out, Talker/Listener, Drain, High/Low, +/-, Data-H/Data/-L, etc. Each vendor also uses a different color wire for each type of connection - there is not consistency. You'll need to figure out how each vendor describes their connections and what color wires they use, and have a wiring diagram to make the connection.

Basically, each connection side (data out, and data in) has 2 parts: a + or High and a - or Low. For each device, connect the Data Out to the Data In. The + connects to + and - connects to -.

For a fully bi-directional communications network you will have 4 connections, like this:
(Device 1 Data Out +) to (Device 2 Data In +). (Device 1 Data Out -) to (Device 2 Data In -)
(Device 1 Data In +) to (Device 2 Data Out +). (Device 1 Data In -) to (Device 2 Data Out -).
