Just bought a 1988 30' Weekender. Learning a lot, but the manuals leave a lot to imagine. Where would the head holding tank seacock be located? in the bilge, under the head?

Not familiar with your boat but it will only have a seacock if you have the facilities installed to pump the waste overboard. If equipped, it will be in the bilge. There would be a hose from the tank to a macerator pump and then another hose from there to the seacock. They are typically below the water line, and could be through the transom, side, or bottom.

if its an electric head the seacock should be in the bilge on the same side as the head in the aft section
my 340 is outside the stringer mid bilge stb side just aft of the A/C strainer
EDIT
I didn't see holding tank....the one I described is for the water intake to the head
the macerator discharges out a thruhull on the stb side just above the waterline
there is a secured y valve near the tank to shut it off

No seacock for the holding tank itself. only one to supply water to toilet and that's located under first step entering the cabin
