The water pressure reading (cooling water) on my smartcraft gage is reading off. It shows 14psi when the engine is not running, and around 17psi when the engine is idling.
I have good water flow and the engine runs right at 170 degrees steady, so I'm sure there is proper water flow.
How do I reset that?

I had the same issue, had to replace the sensor.

Also had same issue. It was a bad sensor.

Just as an aside- I plan to install a general use bargain water/oil/fuel pressure sensor that I purchased on eBay for $18. The connector and threads look identical to what my 5.0 MPI uses on the power steering cooler. I'll let you know if it works.

Well the bargain sensor didn't work.... So I thought . Took my boat to the shop for repairs and the tech says I needed a new water pump. The 'puter had several instances of overheating. Now this is curious. I never had the engine run hot according to my gauges.

Sundeck - read my post on this from the last two weeks, I document a very similar problem, a similarly motivated mechanic and a similar cheap purchase - with a happy ending.
