Tilapia fish tacos I made up:
Marinate fish in olive oil, chili powder, chopped jalapeno and the juice from 2 limes, for at least an hour in the fridge. Set out for 20 to 30 minutes to get closer to room temp. Preheat the grill to medium-high heat. it is a quick cook, maybe 10 minutes tops.
"Salsa" is 2 large Hess avocados, 1 serrano chili chopped finely, part of a red onion chopped, 2 to 3 roma tomatoes chopped, the juice of 2 limes and garlic powder. Mix it all up making sure the avocados become creamy and slightly chunky, salt and pepper to taste. Tomatoes should be stirred in last or they become tomato paste.
Serve on soft tortillas, delicious. Always a big hit.
