I am new to the site, just joined this week but have spent alot of time reading different threads and I can tell you everyone on here is extremely knowledgeable and helpful. I grew up on Sea Rays as well, dating back to our first Sea Ray in 1976. I have not had an S24 but have had 2 220's a little older than what your are looking at. I also have worked in the boat business for over 10 years and have a pretty good idea how the boat you are looking at will perform with the 5.7 Merc.
For skiing, I think you need to figure that you will still be drug for a while. Just be sure you look into propping the boat correctly for your use. YOu may need a little smaller pitch to plane off a little quicker. Just watch top end RPM's. There will be more bow rise than your seville may have had , but I would bet that this boat has trim tabs which will help.
As far as parts are concerned, mehanically it should not be too terrible to find parts. The question will be what the boat may need specifically to the S24. You are in the right place and I would not be worried at all about the age of the boat. You will have a classic ride with gorgeous lines for a whole lot less invested than most everyone else on the water! Enjoy!
