How do these plumbing fittings work?

I removed my ice maker and need to remove the water line feeding it (middle "T" connection) or block off the "T". How do these plumbing fittings work?

Slip the black snap ring off the connector then slide the end of the fitting closest to the water hose down/away from the hose. The hose will then slide out.

+1 Just try not to loose/break the lock ring.

Sometimes it helps to release the couplers by applying pressure to the hose forcing it into the coupler as you depress the ring. Then pull out of the coupler.
 
What are those fittings called?

and what size are they?
