Sounds like you have a closed system. If so, is the coolant level dropping? Have you detected any antifreeze odor from the exhaust?
Leaking antifreeze can produce white exhaust that appears to be steam.
I agree with Ash's suggestion to switch the wires to the gauges. What were the problems that led you replacing the sensors? Have those problems gone away?

In addition to adding the on-board weight of liquids and other items, there is also a need to consider potential weight from heavy rains (even if bilge pumps work properly) and snow/ice. Depending upon slip location/configuration, heavy winds could also add to the downward force (weight).
