400 and Off Shore Fishing

My wife and I are taking ownership of a 2001 400 Sedan Bridge in a few days. The boat will mainly be used for family time on the water. We plan on going out into the Gulf a few times a year on the right days. I would like to install 2 rod holders on in the transom. Has anyone else tried this? Are there any other 400 owners that venture on a fishing trip or two? I've seen it done on another SR 400, but thought I'd seek opinions. I realize this is not a pure off shore boat, but we do like to do a little fishing as well.
 
One of the previous owners of my 01 400DB used the boat for offshore fishing off the coast of North Carolina. He installed some small outriggers on each side of the bridge. You can see them in my sig pic. There are also 5 rod holders installed into the top of the transom. He used it this way for many years so it must have worked out for him. Also the cockpit bench is easily removable so you can walk all about the cockpit unobstructed. Swim platform is also really low to the water for ease in hauling in the big catch.

I don't fish (not yet at least).

Great photos. Thank you! Should I have any concerns about water getting in from the new rod holders? I guess it is solid fiberglass on the transom.
 
The rod holders Sea Ray uses are have drains in the bottom. The drain hoses run to the cockpit scuppers so any water that gets in the rod holder is drained out of the boat, not dumped into it.
 
Has anyone installed outriggers on the 420DA? Contemplating doing it on mine.
